FireWire Taco!

For fun, I have decided to write down a pan fried breakfast taco recipe I sometimes make. I also decided to include a version that uses taco meat. It is more like a regular taco, but uses the same concept of pan frying the tortilla.

Ingredients

1 flour tortilla, burrito sized

3 pieces of thick cut maple bacon

2 eggs

diced tomatoes

diced onions

sour cream

lettuce

shredded cheese

your preferred hot sauce

Preparation

Place a non-stick pan on the stove, heat it at medium heat. Give the pan a couple of minutes to warm up. Then place the bacon directly in the pan. You may use a very small amount of butter, but it isn't necessary. The bacon will oil the pan itself as the fat renders out. If the grease starts to smoke or you notice dark bits in the grease, then turn the heat down slightly. Cook the bacon for several minutes, being sure to turn it over intermittently. I prefer to use tongs for this, but you can use a spatula or even a fork. But keep in mind not to get too close to the hot grease. Once done, set the bacon aside on a plate.

Next crack two eggs into a bowl. Season with salt and pepper, then mix using a whisk or a fork. Then pour them into the pan you used to cook the bacon. We're essentially making an omelet. While the eggs cook, get a pan large enough to fit the tortilla in. Put that pan on another burner at medium heat, then add butter. Once the butter melts, lay the tortilla in the pan, then sprinkle on your shredded cheese. Tear up or chop your bacon into smaller pieces, then sprinkle that onto the cheese. Next transfer the eggs into the pan, on top of the cheese and bacon.

Fold the tortilla closed. Cook it for several minutes, intermittently flipping it until both sides are golden brown. If you burn it a little, it should still be fine. You can sprinkle a pinch of garlic salt on the tortilla while it cooks, if you want to add some extra flavor. Once golden brown, place it on a plate, then use a utensil to gently unfold the taco. Now you may add the sour cream, tomatoes, lettuce and onions. Or whatever else you want to mix in.

Taco Meat Version

This section will be my taco meat recipe.

Heat a pan on your stove at medium heat. Add a small amount of butter, as it melts gently move the pan to coat the bottom with the butter. Next add ground beef. Break up the beef with a wooden spoon or spatula, be sure to move it around as it cooks so it doesn't burn. Once it has started to brown, you can add your preferred spices, here is what I use.

Salt

fresh ground pepper

granulated garlic

Rib Rack brand hot honey spice rub

pre-mixed taco seasoning (mine is a generic brand)

I apologize for the lack of portions. I guess at it every time, then I go by taste after all the meat is browned. Anyway, once all the meat is browned, its fat should be rendering out. Slightly lower the heat and allow the meat to simmer for around 6-8 minutes.

When the meat is done, put it in a colander and drain the grease. Prepare your tortilla and assemble the taco, as instructed in the breakfast taco recipe.

And you're done! While I would not eat this every day, I can promise that it is delicious and filling!
